- Make grain and legume salads: Quinoa Salad: fold about 3 cups cooked cooled quinoa with 1 cup halved cherry tomatoes, 1 cup diced cucumber, 1/2 cup diced red bell pepper, 1/4 cup minced red onion and 1/2 cup chopped parsley or cilantro, dress with 3 tablespoons olive oil, 2 tablespoons lemon juice, salt and pepper. Mediterranean Chickpea: combine 3 cups drained rinsed chickpeas with 1 cup diced cucumber, 1 cup halved cherry tomatoes, 1/2 cup finely chopped red onion, 1/2 cup crumbled feta and 1/4 cup chopped parsley, dress with 3 tablespoons olive oil and 2 tablespoons lemon juice, season to taste.
- Pasta Salad and Spinach Strawberry: Pasta Salad: toss cooled cooked pasta with 1 cup halved cherry tomatoes, 1 cup diced cucumber, 1/2 cup sliced olives, 1/2 cup diced bell pepper and 1/2 cup cubed mozzarella or feta, dress with 1/3 cup olive oil, 3 tablespoons red wine vinegar, 1 teaspoon Italian seasoning and salt and pepper. Spinach Strawberry Salad: combine 6 cups baby spinach with 2 cups sliced strawberries, 1/2 cup toasted sliced almonds and 1/2 cup crumbled goat cheese or feta, drizzle Spinach strawberry dressing and gently toss.
